Guelaguetza's was especially complex, with a lot of seed flavors going on.

Btw, the other judge was Nancy Zaslavsky, who has written several books about Oaxacan cooking and probably knows more about mole than anyone born in the US.j goldnoreply@blogger.comtag:blogger.com,1999:blog-28053835.post-82695363383783596762009-06-17T10:11:53.186-07:002009-06-17T10:11:53.186-07:00Great photos, and it was really GREAT meeting you ...Great photos, and it was really GREAT meeting you (briefly) at the Church & State booth.

I was so excited to be there as well, and made sure we were there an hour early. I think it's is actually originally from uttar predesh, not bengal. the only reason I know is because some guy told me to try it when we were in varanasi (benares) because it supposedly originated there. I wouldn't be surprised if it did start out there actually, being that it's one of the oldest cities in the world and there are lots of strange little winding roads, perfect for street vendors to stake out their own spots and come up with weird concoctions.

anyway, great post! I'm glad you managed to get at so much stuff despite how quick it all seems to disappear.Anonymousnoreply@blogger.com
